Back to these green cookie dough bars I make with one special ingredient – cannellini beans!
Chickpeas are also very tasty and delicious 🤩🤩 here is the recipe:
⬇️ Cookie base:
▪️1 cannelini beans (400g)
▪️1 / 4 cup vanilla protein powder
▪️1 teaspoon of raw or brown sugar •️pinch of salt▪️1 tbsp peanut butter
▪️1 / 2 cups of chocolate chips or sliced black slices
⬇️ Caramel filling:
▪️1 / 2 cup peanut butter •️️2 tbsp coconut oil
+2 tbsp black choc dripping on top
1️⃣ In a blender combine the chopped beans, protein, sugar, salt and peanut butter. Mix to make a smooth cookie dough.
2️⃣ Add the chocolate chips and mix again so that the chocolate is mixed (beat me just a few times)
3️⃣ Transfer the mixture to a tray or baking sheet. Squeeze it down to pack it, using a heavy glass base is helpful. (You can put a glass on top of baking paper when you fold it) Put in the fridge for 15-20 minutes.
4️⃣ In the microwave, melt the peanut butter and coconut oil. Stir to smooth. Remove the tray and pour this over. Return to refrigerator to set 1 hour.
5️⃣ Melt the chocolate using a broiler or microwave method, stir as it melts and remove from the heat. Remove the tray from the fridge and cut into pieces. Holding a knife under hot water first helps to cut it.
6️⃣ Pour melted chocolate over. Store in a refrigerator.
